What hours are the day and what hours are the night?

I am a former chef and for the kitchen they can start as early as 8-9 am and be there until 11-12 pm, for service staff, some are there early 9:30-10 am to setup and make sure things are ready for the lunch rush, and night time shifts start at 4-5 pm and can run for PT until 8-9 pm and FT until 10-11 pm, and alot depends on the day and amount of business, later in the week they have extended hours.
Alot is dependant on the operation and the management as to how the schedules are setup, no late after midnight hours for those places.
